Grilled veggies rice bowl

Ingredients : Tofu, Garlic, Zucchini, Green Beans, Sweet potato, Mint leaves, Green Chilies, Yogurt, Parsley, Rice.

Recipe

Veggie and Protein prep :

  1. Strain water from the tofu, cut strained tofu and sweet potatoes into cubes, marinate it in 2 tsp olive oil, salt and seasoning(paprika/red chilli powder, Herbs, garlic salt,1 tbsp of Honey- experiment with your own blend of herbs and spices)
  2. Bake at 375 F in the oven for 35/40 mins(until cooked and/or golden brown).
  3. Saute’ Green beans and Zuccini in a pan with butter, garlic , salt and pepper for 10-15 minutes or until cooked.

Sauce/Dressing : Blend 1/2 cup yogurt/Greek yogurt, handful of mint leaves and parsley , 1 green Chili/half a jalapeno, salt.

Rice : Wash and Rinse your rice and cook it in water(1:2) – 1 cup of rice cooked in two cups of water
